Sure, potatoes can be cooked any which way and there are a myriad of different breads to bake. However, we\u2019re talking specifically about pie. Filled with sweet or savoury ingredients, this flaky crusted pastry is always a crowd-pleaser at a pot luck dinner. In today\u2019s blog, we\u2019ll talk about the various varieties of pie and how to achieve the perfect crust.&nbsp;<\/p>\n\n\n\n<h3 id=\"h-the-history-of-pies\">The History of Pies<\/h3>\n\n\n\n<p>The word \u201cpie\u201d finds its source in the magpie. Named because of its assortment of fillings, pies and magpies both collect odds and ends. One such recipe called for exactly that: asking its bakers to include beef, beef suet, hens, ducks, rabbits, hard-cooked egg yolks, date, raisins, and prunes.&nbsp;<\/p>\n\n\n\n<p>Early pies, called galettes, had crusts made of ground oats, wheat, rye, or barley containing honey inside. Like the modern pastry, the could contain any number of ingredients. In fact, the oldest recipe for a chicken filling was found written on a table dating back to 2000 BC.&nbsp;<\/p>\n\n\n\n<p>Using the tart&#8217;s crust to preserve the juices of cooked birds and meats, Romans never intended to actually eat the flour based conduction. However, soon they would develop recipes that included a rye dough filled with goat\u2019s cheese and honey.\u00a0<\/p>\n\n\n\n<p>Eventually, pies would find themselves as a staple of traveling and working people. Being easy to make and easy to transport, the dough was transformed into a variety of easily mouldable shapes. Leaving the filling on top of the crust but open to the world.<\/li><li>A <em>top-crust<\/em> has the filling in the bottom of the dish and is covered with a pastry before baking.\u00a0<\/li><li>A <em>two-crust<\/em> has the filling completely enclosed in the pastry shell.\u00a0<\/li><\/ul>\n\n\n\n<p>Adding onto these differences can be:<\/p>\n\n\n\n<ul><li>What flour is used: wheat, rye, etc.<\/li><li>What fat is used: butter, oil, etc.&nbsp;<\/li><\/ul>\n\n\n\n<p>Filling-wise, bakers can choose between a <em>sweet<\/em> or <em>savoury<\/em> tart.<\/p>\n\n\n\n<p>Sweet ingredients include:<\/p>\n\n\n\n<ul><li><strong>Fruits<\/strong> such as <a href=\"https:\/\/courses.gooroo.com\/courses\/sustainable-cooking-5-easy-apple-recipes\/228\" target=\"_blank\" rel=\"noreferrer noopener\">apples<\/a> and cherries.<\/li><li><strong>Nuts<\/strong> such as pecans and almonds.<\/li><li><strong>Brown sugar<\/strong> to create a sugar pie.<\/li><li><strong>Sweetened vegetables <\/strong>such as rhubarb.&nbsp;<\/li><\/ul>\n\n\n\n<p>Savoury ingredients comprise of:<\/p>\n\n\n\n<ul><li><strong>Meats<\/strong> such as steak or chicken.<\/li><li><strong>Eggs and cheese<\/strong> to form a quiche.<\/li><li><strong>A mixture of meat and vegetables<\/strong> to create a classic pot pie.<\/li><\/ul>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" width=\"709\" height=\"472\" src=\"https:\/\/gooroo-blog.s3.us-east-1.amazonaws.com\/2021\/05\/06141513\/priscilla-du-preez-SU5jSHu1pK8-unsplash.jpg\" alt=\"\" class=\"wp-image-1924\" srcset=\"https:\/\/gooroo-blog.s3.us-east-1.amazonaws.com\/2021\/05\/06141513\/priscilla-du-preez-SU5jSHu1pK8-unsplash.jpg 709w, https:\/\/gooroo-blog.s3.us-east-1.amazonaws.com\/2021\/05\/06141513\/priscilla-du-preez-SU5jSHu1pK8-unsplash-300x200.jpg 300w\" sizes=\"(max-width: 709px) 100vw, 709px\" \/><\/figure>\n\n\n\n<h3 id=\"h-achieving-the-perfect-pie-crust\">Achieving the Perfect Pie Crust<\/h3>\n\n\n\n<p>Regardless of the type of pie you choose <a href=\"https:\/\/www.gooroo.com\/blog\/baking-powder-vs-baking-soda\/\" target=\"_blank\" rel=\"noreferrer noopener\">to bake<\/a>, achieving the perfect crust is a must. Don\u2019t fret \u2014 we have some tips for you!<\/p>\n\n\n\n<ul><li>Use a mixture of butter and shortening to create a crust that is easy to work with <em>and<\/em> delicious to eat. Sour cream is also a very easy fat!<\/li><li>Do the mixing in smaller increments. Add the butter half at a time to the food processor. This helps to keep the dough smooth.&nbsp;<\/li><li>Sprinkle with ice water to encourage the dough to stick together. Avoid too much water otherwise your crust will be tough!<\/li><li>Let the dough sit for 1 hour to 2 days in the refrigerator. Once out, allow it to be at room temperature for 5-10 minutes.<\/li><li>Use an egg-wash to achieve the perfect pie coating.
